Citrus-infused Mediterranean Chicken with Dates and Olives

Ingredients:

  • 1 whole chicken (about 4-5 pounds), cut into serving pieces
  • Salt and freshly ground pepper to taste
  • 3 tablespoons extra-virgin olive oil
  • 1 lemon, thinly sliced
  • 1 orange, thinly sliced, plus 1/2 cup fresh orange juice
  • 12 large soft dates, halved and pitted
  • 1 onion sliced
  • 1 teaspoon dried thyme
  • 1 cup large green olives

Instructions:

 

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken pieces with salt and pepper, ensuring an even coating.
  3. In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat. Brown the chicken pieces on all sides until golden.
  4. Arrange the lemon and orange slices around the chicken in the pan. Squeeze some juice from the lemon and orange over the chicken.
  5. Add the halved and pitted dates, distributing them evenly among the chicken pieces.
  6. Sprinkle the dried thyme over the chicken for a flavorful herb kick.
